I am pretty bored right now so I thought I might kill some time by doing this.
Note: I will not do the physics games for PS3 because "VistaSucks" has made one here: http://www.fun-motion.com/forums/showthread.php?t=138
Xbox 360:
The Elder Scrolls IV: Oblivion Rated M. Also available on the PC and PS3
It uses the Havok engine (I could be wrong on that...) and creates enviroments were all objects that can be picked up (and more) can be moved around with the grab button. Also there are ragdolls. I find it amusing when you blast someone into a table of pots and bottles and see them knocking everything out of their way...
Halo 3
Bungie has announced a long time ago that it will have extremely powerful vihicle deformation and alot more destructible enviroments
Crack Down
Has a large amount of object defomations and has very realistic vehicle physics. Sending a gang member flying into the air with a RPG Homing Launher it is very fun. Also you can pop car tires sending the car catapulting into the air is great fun.
Flat Out: Ultimate Carnage (also on PS3 and PC)
Following as a sequel to Flat Out 2 expect some beautiful vehicle defomations and crazy destructibe enviroments.
Gears of War
What happens when awesome gameplay is mixed with extremely dynamic rag-dolls? One of the best games on Xbox 360 so far and the best game visually that is currently released.
Nintendo Wii
Red Steel
Red Steel uses PhysX Ageia as the physics engine so expect some great physics.
Elebits
A high amount of physics simulation plus the controlls of the Wii to compliment the game adding deeper gameplay.
The Legend of Zelda: Twilight Princess:
When a game uses the Wii controller for slice and dicing followed with ragdolls (am I mistaken?) it creates a deep and atmospheric gameplay.
Following with some more titles and I will add some PC games to the list.

Note: Crackdown also has some decent ragdoll physics. Launching bodies a quarter of a mile with an RPG? Great fun.

Elebits for the Wii is about as "pure" as physics game get. the entire game is about manupulating objects via physics. The engine itself isn't perfect, but it shows that the Wii and it's remote have a GREAT potential for physics games.

redsteel for the wii uses physics for grenades thats it and ragdolls thats it i own it i have a wii zelda twilight princess has more physics

Just to let everyone know I am going to put some more effort into this topic by adding links to a video showing of the physics and I am going to add a PC section of "FULL RETAIL PHYSICS GAMES". Expect it in about 3 hours.

The closetst the Legend of Zelda: Twilight Princess comes to having physics is throwing rocks, using the clawshot, and fishing. There are no ragdolls in there. I know because I finished the game.

I have the gamecube version.. It's a shame they didint encorprate ragdoll physics into the Wii version.

Speaking of crackdown I just beat it, good fun especialy the SUV with 4 stars in driving. Small list so far ill see if I can think up some.

such a pitty, i have finished it to ^^ but i got bored after roal-goal 1-6 but it was fun!

Yes Oblivion does use Havok.

For PSP there are the Mercury games, where you control a little blob of mercury.
And you have to avid obstacles, and mix colours and stuff.
It's pretty cool, and it's all physics based.

Uhhh... Wii Sports doesn't have ragdolls... it has CHARACTERS, which are not NEARLY the same thing. Nobody dies or even falls down. Yes, Wii Boxing SORT OF has ragdolls, but I believe they are just animations and not ragdolls.
EDIT: You may want to add LittleBigPlanet, the only reason besides Ratchet and Clank to get a PS3. Niether are worth $720 though... (for the system and the games)

It looks GREAT for a NDS game... Best 3d graphics on the DS so far! It's the best implamation of physics besides the homebrew spring game by Walaber.
